For a last-minute weeknight dinner entrée, my Bacon Wrapped Pineapple Shrimp will be a hit with the whole family! It’s so quick and easy to make, even the kids can help prepare it. The flavors are simple, yet divine, as these shrimp will melt in your mouth.

 

Prep-to-Eat Time: Approx. 20 minutes

Ingredients:

Large shrimp, deveined and tails removed

Pineapple chunks (either freshly cut or canned)

Bacon, cut in half

Wooden toothpicks

 

Directions:

Holding a shrimp, stick a chunk of pineapple in the natural curve of the shrimp. Wrap a strip of bacon around the shrimp and pineapple and secure it with a wooden toothpick, ensuring to pierce through both sides of the shrimp and bacon and the pineapple.

Once all shrimp are wrapped and secured, put them in a large sauté pan. Heat to medium and cook until bacon begins to brown and shrimp are opaque and firm, flipping periodically.

 

Serving Suggestions:

Serve with a piece of garlic toast and a light pasta salad: pasta shells tossed with chopped broccoli and tossed in olive oil with salt and pepper.
