Everyone’s familiar with the traditional chicken pot pie, but try bringing this beef version to your dinner table. It’s hearty and savory and it will leave everyone craving for more.  It’s a great one-dish meal filled with meat and veggies and is quite flavorful!

Prep-to-Eat Time: Approx. 1 hour

Ingredients:

1 lb. lean ground beef

1 bag frozen mixed vegetables

1 frozen pie crust

1 12-oz. jar brown gravy with onions

1 sleeve of Ritz Crackers

1/2 stick of butter, melted

Garlic powder

Salt

Pepper

 

Directions:

Preheat oven to 350 degrees.

Take pie crust out of the freezer and let thaw at least 15 minutes. Use a fork to press the points down into the crust to make small holes, so that it doesn’t bubble up. Bake pie crust for 10 minutes.

While pie is baking, brown the ground beef in a saute pan. Boil vegetables according to package directions, then drain.

Drain the ground beef, then add to a large bowl. Add the vegetables and gravy. Sprinkle with garlic powder, salt, and pepper. Stir until well-combined.

Put mixture into the pie crust.

In a bowl or large Ziploc bag, smash Ritz Crackers until very fine. Add melted butter to the smashed crackers and mix until well-combined.

Top the beef pot pie with the buttered crackers. Bake at 350 degrees for 35-40 minutes, until top just begins to brown slightly.

 

Serving Suggestions:

Stay simple and with this hearty dish; it’s already stuffed with veggies, so I would just pair it with some tasty corn bread, which you can even use to scoop up the pot pie.
