Labor Day is just a couple weeks away, and it’s a time to rest and relax in honor of all our daily hard work. It’s also a highly-anticipated long weekend when most of us look forward to getting together with family and friends. If you plan on attending a Labor Day party, or want to host your own, here’s a great dish that’s sure to be a crowd pleaser! Ingredients:

1 box rotini (corkscrew) or farfalle (bowtie) pasta

1 can yellow corn, drained

1 cup celery, chopped

1 red pepper, chopped

1 cucumber, chopped

1 container cherry tomatoes, halved

1 white onion, chopped

½ cup fresh parsley, chopped

1 ½ cups Newman’s Own Family Recipe Italian Dressing

¾ cups mayonnaise

Salt

Pepper

 

Directions:

Boil water and cook pasta according to package directions.

While pasta is cooking, chop/cut all your vegetables.

Drain the pasta and add to a large bowl with all the veggies; mix.

In a separate bowl, whisk together the dressing and mayonnaise. Pour mixture over the salad and toss to coat. Season with salt and pepper.

Serving Suggestions:

If you’re hosting your own party, it’s good to have a variety of beverages. You can choose to go the simple “wine and beer” route or you can offer some sodas and juice along with different types of alcohol so your guests can create their own cocktails. Don’t forget about those who prefer non-alcoholic; treat them to some fresh-squeezed lemonade or refreshing iced tea, served with sliced lemon.
